DAY 3

Kakheti Wine Region

Depart Tbilisi for the Kakheti region, renowned for its viticulture and welcoming hospitality. Your first destination is the David Gareja complex, a 6th-century rock-hewn monastery etched into the slopes of Mt. Gareja. The journey then takes you to Udabno village, established during Soviet times as a new home for the Svan ethnic group from the Svaneti region. Here, enjoy a homemade lunch with a local Svan family, tasting Svanetian dishes rich in bread, potatoes, meat, and cheese, including the savoury Kubdari, a meat-stuffed flatbread. Post-lunch, explore the vineyards and visit a traditional Georgian wine cellar in Kondoli village. Sample the exquisite 'Zghia', a natural wine produced using time-honoured methods, including the use of kvevri, large clay vessels integral to Georgian winemaking. The day concludes with a visit to the Chavchavadze estate in Tsinandali, a 19th-century prince's estate featuring a beautifully landscaped garden, a historic winery, and a memorial house. This winery holds the distinction of being the first in Georgia to bottle wine. Settle in for the evening at your hotel in Tsinandali, reflecting on a day rich in history and oenological exploration.

DAY 4

Kakheti Wine Region

Dive into the local culture with a visit to the Telavi market, a vibrant open-air space where regional farmers showcase their fresh produce and homemade goods. Experience the richness of Georgian agriculture as you taste the season's sweetest fruits, sample fresh breads, sweets, and collect some local spices. Next, visit Gremi, a captivating 16th-century architectural complex, comprising a royal citadel and a church. Your journey continues to Kvareli town, renowned for its exquisite wine and cheese pairings, a testament to the dedication of Georgian sommeliers. Reserve some appetite for a traditional Georgian barbecue lunch with a local family on their farm, featuring beef or lamb cooked in a simplistic yet flavourful style. Participate in this culinary tradition, where men typically handle the barbecue and women prepare bread and Churchkhela, a unique Georgian confection. Conclude your day with a visit to a local farmer's home to learn about the art of making kvevri, the distinctive clay pots essential to Georgian winemaking.

Kakheti Wine Region

DAY 5

Tbilisi

Embark on an early morning return to Tbilisi via the picturesque Gombori Pass. Your first stop is Dezerter Bazaar, Tbilisi’s largest farmer’s market, where Teona, a passionate local cook, awaits. She will guide you through the bustling market, introducing you to the freshest seasonal produce, local meats, and artisanal products like pickles and cheese. Afterward, join her at her home to prepare and enjoy Georgian culinary staples, including khinkali and eggplant with walnuts. In the afternoon, visit the ancient city of Mtskheta, a UNESCO World Heritage Site, to explore its prominent religious sites, Jvari Monastery and Svetitskhoveli Cathedral, steeped in history and legend. Before returning to Tbilisi, make a stop at Chardakhi village for a wine tasting at a renowned cellar, celebrated for its organic wines featured at prestigious venues like the Ritz Carlton in London.

DAY 6

Kutaisi

Journey to western Georgia, starting with a visit to Gori, famously known as the birthplace of Stalin. Explore the Stalin house-museum before continuing to the Uplistsikhe Cave town, a historical Silk Road stopover etched into a mountainside. Notice the changing landscape as you enter the Imereti region, marked by dense forests and mountainous terrain. Visit a century-old wine cellar in Merjevi village, nestled on a mountain slope, where you'll discover the distinct wine-making traditions of western Georgia. Enjoy a lunch at a local farmhouse, tasting homemade Imeretian dishes, with Pkhali as the standout dish—a delectable vegetable pate blended with walnut paste and fresh herbs. Make a stop in Chiatura, an intriguing industrial town retaining much of its Soviet-era character, including mines, architecture, and a unique cable car system. Conclude your day by arriving in Kutaisi and settling in for the evening.

DAY 7

Kutaisi

Explore the ancient city of Kutaisi, over 3000 years old, starting with a walk through its charming old town and a visit to the prominent Bagrati Cathedral. Perched on a hilltop, this cathedral is a city landmark, notable for its turquoise dome visible from across Kutaisi. Experience the unique Georgian Polyphonic songs in the cathedral's courtyard. Then, venture northwest into the historic Samegrelo region, renowned for its spicy Megrelian cuisine. Marvel at the natural beauty of the Martvili Canyons, where steep cliffs and cascading waterfalls are best appreciated during a boat ride. Enjoy a local family lunch, featuring traditional wines and Samegrelo’s staple dish, Elarji – a hearty, cheesy cornmeal porridge known for its stretchy texture. Conclude your day with a visit to the Gelati Monastery, a UNESCO World Heritage Site. This monastery is one of Georgia's most significant sites, serving as an ancient educational centre and the resting place of David the Builder, a revered Georgian king.

DAY 8

This area is celebrated for its alpine lakes, waterfalls, and forests. Taste Racha's culinary specialties like Lobiani, a bean-filled bread, and Shkmeruli, a creamy garlic chicken dish. Sample the region's famous Khvanchkara wine, a semi-sweet red wine known for its berry aromas.
